Dark Chocolate Strawberry Granola

Packed with antioxidants, this homemade dark chocolate strawberry granola is super easy to make and seriously addictive! Moreover, it is more budget friendly than the equivalent version you’d buy at the grocery store. You can store this granola in an airtight container up to 4 weeks at room temperature…but I highly doubt it will last you this long. Or, if you decide to make big batches, it can go into the freezer in an airtight bag up go 3 months. This is what I have done during my third trimester, in preparation for the postpartum period. I doubled the recipe twice to make sure we have something healthy easily available to us as a snack and breakfast!

Ingredients needed to make the recipe

  • Coconut Oil: Since we are using almond butter in this recipe, you’d require less oil (only 2 tablespoons) because the almond butter releases its natural oil.
  • Dark Chocolate: I recommend to use chocolate chips or a chocolate bar that is made with at least 65% dark chocolate.

HOW TO MAKE DARK CHOCOLATE STRAWBERRY GRANOLA

Preheat oven to 350°F. Manually cut dehydrated strawberries into small pieces and set aside. In a mixing bowl, add rolled oats, chia seeds, cocoa powder, ground cinnamon and mix.

In a small pot on low heat, melt maple syrup, almond butter, coconut oil, vanilla extract and mix until combined.

Pour the maple syrup mixture over the rolled oats mixture and mix to evenly coat all the oats. Transfer to a baking sheet lined with parchment paper and tightly pack the mixed oats. Bake for 20-25 minutes. PRO TIP: The tighter you pack the oats, the better it can be broken into chunks.

Remove the baking sheet from the oven. Garnish with sea salt flakes and dark chocolate. Let it to cool at room temperature for about 2 hours. PRO TIP: I like to add the chocolate when fresh out of the oven. That way, the chocolate gets melted into the granola instead of finding itself at the bottom of the container.

Manually break granola into bite size pieces. Add chopped freeze-dried strawberries and mix.

VARIATIONS & SUBSTITUTIONS

  • Peanut butter: You can use peanut butter instead of almond butter. I personally find almond butter has a milder taste so it gives me the full dark chocolate and strawberry flavor.
  • Goji berries: Goji berries can be an amazing additon or serves as a strawberry substitution to this recipe! I actually use goji berries as an alternative sometimes. It’s a superfood that is packed with antioxidants.
  • Pumpkin seeds: You can also add pumpkin seeds to the granola recipe if you are looking for extra protein in your diet.
  • Honey: I use maple syrup in pretty much all the recipes that require a sweetener because that’s the Canadian in me! However, you can choose to use honey if that’s what you have in your pantry.

  • 2 TBSP cocoa powder
