This grilled corn recipe is the perfect addition to your summer barbecue side dish! The combination of a spicy, smokey and tangy mayo-based sauce with the feta cheese on the corn will create a burst of flavors in your mouth. You can also switch feta cheese with crumbled blue cheese; I often use them interchangeably!

Ingredients
- 4 ears of corn husks removed
- Up to 2 Tbsp room temperature butter for brushing
For the sauce
- 2 Tbsp mayonnaise
- 2 Tbsp buffalo sauce
- 2 Tbsp paprika
- 1 tsp maple syrup
- Pinch of salt
To garnish
- 3 Tbsp feta crumbled
- Chopped parsley
Instructions
- Mix all ingredients for the sauce and set aside.
- Heat grill on medium heat, about 375F.
- Brush corn with butter and place on the grill. Close cover and grill for 15 minutes, turning every 4-5 minutes and brushing with more butter. The corn will be ready when the kernels are opaque and more bright in color or by pricking the kernels with the tip of a knife.
- Serve hot with mayo sauce over the cob and garnish with feta and chopped parsley.
